It is a vegetable mainly consumed in winter, of which the fleshy root of round-flattened shape is used.
It adapts well to the temperate and humid climate of Piedmont and has excellent resistance to cold, overcoming temperatures of 10°C below zero without damage.
The optimal temperatures for growth are however 15-20° C.
The leaves are dark green and can be eaten cooked.
