The Piedmontese chestnut, present in the territory of the Lanzo Valleys, belongs to the Sativa genus. The fruit weighs about 10-30 g; the pulp, creamy white in color, is covered by a skin (episperm) that can be glabrous or tomentose. In some varieties the fruit peels easily, in others the episperm, particularly adherent to the seed, hinders the peeling operations. They are medium-sized chestnuts, some even small. The chestnut growers of the Lanzo Valleys do not use machinery for harvesting, but collect the burrs with a wooden rake and long iron tongs. Once collected, they leave them in the ricciaia for a few days, waiting for the burr to dry out, making it easier to extract the chestnuts inside.
