Pistachios are foodstuffs of plant origin.
They are the oily seeds contained in the fruit (drupe) of the pistachio, a small tree up to ten metres tall with tall, dense foliage, belonging to the botanical family Anacardiaceae, genus Pistacia and species vera.
The small, elongated and more or less flattened fruits can be eaten au natural, roasted and salted, or used as an ingredient in various culinary preparations – sauces, condiments, nougat, ice cream and various sweets. There is no shortage of associations with meat, fish and cheeses of various kinds.
