The lime is a hybrid citrus fruit of Asian origin, best known for its less sour flavour than lemon and for its zest rich in essential oils, which also makes it very popular in cosmetics. The lime tree is 4-5 metres high. The fruits are small, oval or round, with a thin skin. The green colour of its skin should not deceive, as it indicates that it has reached maturity, whereas it turns yellow when overripe.

It is very rich in potassium, calcium and phosphorous. Many of the properties of limes derive from the antioxidants in which they are rich: Vitamin C, Vitamin E, polyphenols and terpenes that protect the heart and reduce cholesterol and triglycerides. Antioxidants fight free radicals with an anti-cancer effect.
