Spinach (Spinacia oleracea) is a herbaceous vegetable belonging to the Chenopodiaceae family. It is a very common food rich in Vitamin A.
For the Arabs, who introduced this vegetable to Europe between 1200 and 1300, spinach was “the prince of vegetables”, as it was for the scholars who investigated its nutritional properties at the beginning of the twentieth century.
In the kitchen, spinach has many uses and is extremely versatile. It can be eaten raw in salads, boiled or sautéed; it plays the main role as a side dish, but it is also included in many recipes for elaborate first and second courses.
At an industrial level, spinach is also used to make a dry flour called “spinach flour”.
